Tandoori Cucumbers


These cucumbers are a wonderful flavor-filled side that will compliment any mild protein.


  • 4 cucumbers, peeled and chopped
  • ½ cup cider vinegar

Spice Mix (This can be made up to a month in advance and stored in an air-tight jar.)
  • 1 tablespoon ground coriander
  • 1 tablespoon ground cumin
  • 1 tablespoon salt
  • 1 tablespoon turmeric
  • 1 tablespoon ground ginger
  • 1 tablespoon paprika (Hungarian for a bit more heat.)
  • 1 tablespoon cayenne pepper (vary for heat level)
  • ½ tablespoon freshly ground black pepper
  • ½ tablespoon sugar
  • ½ teaspoon ground cinnamon

Mix together in a bowl and enjoy!
