These
cucumbers are a wonderful flavor-filled side that will compliment any
mild protein.
- 4 cucumbers, peeled and chopped
- ½ cup cider vinegar
Spice Mix
(This can be made up to a
month in advance and stored in an air-tight jar.)
- 1 tablespoon ground coriander
- 1 tablespoon ground cumin
- 1 tablespoon salt
- 1 tablespoon turmeric
- 1 tablespoon ground ginger
- 1 tablespoon paprika (Hungarian for a bit more heat.)
- 1 tablespoon cayenne pepper (vary for heat level)
- ½ tablespoon freshly ground black pepper
- ½ tablespoon sugar
- ½ teaspoon ground cinnamon
Mix together in a
bowl and enjoy!
